Insomnia Cookies, a Philadelphia-founded bakery established in 2003 by University of Pennsylvania alumnus Seth Berkowitz, is expanding its presence in the region. The company will open its first airport shop in Terminal C of Philadelphia International Airport next spring. This opening is part of the airport's “Founded in Philly” initiative to showcase local brands.

The new airport counter will operate until 1 a.m. from Monday to Wednesday and until 3 a.m. Thursday through Saturday, making it one of the few late-night food options available at the airport. Most other food outlets at the airport close earlier, with only a few exceptions staying open late: 24-hour SGR candy store and Chickie & Pete's, which is open until 10:30 p.m.

Travelers will be able to enjoy the bakery's full lineup of warm, classic cookies, deluxe cookies, and the company's own “Cookies IN Ice Cream,” plus other travel-friendly treats.

According to NBC10 Philadelphia, the location will be managed by veteran restaurateur Hakan Ilhan, who is known for his work with several Philadelphia and Washington, D.C. dining establishments. They include Airport Dining and Sabrina's Cafe.

“Philadelphia is our hometown, and we're excited to bring our warm, delicious cookies to Philadelphia International Airport,” Berkowitz said to PhillyVoice. “This strategic collaboration marks a significant milestone in our growth trajectory, proving the success of our channel expansion strategy and our ability to reach Insomniacs in unparalleled ways. By embedding the brand deeper into travel environments, we reaffirm our commitment to satisfying the cravings of Insomniacs wherever they are and lead the industry in indulgent innovation.”

Insomnia Cookies has nearly 300 locations across the United States, Canada, and the United Kingdom, including 17 in the Philadelphia region prior to the airport location.

In addition to the Insomnia Cookies location, the Philadelphia International Airport is also spending $500 million on upgrades to its restrooms, waiting areas, and signage ahead of what experts predict will be an influx of travelers next year for the nation's 250th anniversary and various sports events held in the Philadelphia area.
